Spicy Couscous

Ingredients
- 2 cups Springo couscous
- 1 tablespoon olive oil
- 1 medium size onion, cut into big cubes
- 1 kg of chicken or meat (as desired)
- 2 teaspoons garlic, crushed
- 2 tablespoons tomato paste
- ½ teaspoon cinnamon
- ½ teaspoon turmeric
- ¼ teaspoon ginger
- 2 cups vegetable stock
- 3 zucchinis, cut into big circles
- 2 carrots, cut into cube
- 2 potatoes, cut into cubes
- 3 cups cabbage, shredded
- ¼ cup golden raisins
Instructions
- Place the couscous over low heat, cover with water, and boil until the couscous is tender, about 15 minutes.
- Add the chopped onion and garlic to a large bowl with the beef or chicken that has been sautéed in oil until it wilts.
- Blend in the tomato paste, ginger, cinnamon, and half of the vegetable stock, then let it come to a boil.
- After adding the turmeric, salt, and pepper, stir for two minutes.
- After adding water, simmer for one hour.
- After adding the potatoes, zucchini, and carrots, lower the heat and cover the pot. Cook the mixture for 50 to 60 minutes on low heat. Stir the meat or chicken and veggies until they are all cooked through.
- Once cooked, add the chickpeas to the mixture and leave for 5 minutes, then serve in a large dish and garnish with a few chickpeas.
